Ana & Nicolas Crespo 'Pillcocaja' Golden Honey Typica // Azuay, Ecuador
Nestled in the heart of the Yunguilla Valley, Pillcocaja is somewhat of a famed coffee farm throughout Ecuador. Their dedication to cultivating rich biodiversity amongst their coffee trees and use of native forest shade trees known as ‘faiques’ promotes a healthy and distinct microclimate for their coffee trees and elevates the health and quality of the cherries produced. We’ve been working closely with Ana and her team for the past five years — ever since she first introduced herself at our roastery here stateside.
Pre-harvest, Ana and her team modulate the irrigation of the coffee trees to achieve a set brix content, which affects the amount of pulp, or “honey” is available on the seed. After pulping, the coffee is transferred directly to the dry room where it stays for 20-22 days, consistently turning the coffee and measuring moisture levels to achieve a set profile.
