This lot was processed by soaking fully intact and ripe cherries inside of a barrel with Sccharomyces Yeast. Very little water was added, just enough to “soak” the yeast and make it rise. The coffee remained inside of the barrel for three full days. After the fermentation was complete, the coffee was stirred on the raised beds to promote even drying four times per day.

This semi-carbonic maceration process is found to bring out intense tropical acidity and leave extremely little bitterness.
