Demetrio Sánchez Pino - Gesha 'Copa de Oro' // Huila, Colombia
Demetrio Sánchez Pino is a first-generation coffee grower from the municipality of La Plata, on Huila’s southwestern border. His farm spans a total surface area of four hectares, where he grows Var. Colombia, Caturra, Pink Bourbon, Gesha, and Arushi. Demetrio also grows corn, avocados, and arracacha, a nutrient-rich Andean root vegetable. He lives at his farm with his wife Rosalba and their four daughters.
This winning washed Gesha, which we selected from the Copa de Oro competition within Huila, was hand-selected for ideal ripeness, before being put into a flote, where the day’s collection was put into a tank where underripe cherries float to the top and be skimmed. The cherry was then fermented intact overnight, de-pulped and fermented in plastic vessels for 64 hours. The wet parchment was then rinsed once and put out to dry on raised beds inside a parabolic dryer for 20 to 25 days, after which the dry parchment was put into GrainPro bags. This is our second year working with Demetrio.
