    Nestled at the foot of Mt. Kenya lies the Kii Coffee Factory, which is named after the nearby river which flows with fresh water delivered from the mountain — which is also used for washing and processing cherries.  Cherries are hand selected and delivered by mostly smallholder farmers to Kii.  The Kii Coffee Factory, alongside Karamikui & Kiangoi, are the three mills that are part of the Rung’eto Farmers Cooperative Society, which was established in 1997, and renowned for its implementation of high quality selection and processing practices.

    Cherries are depulped on arrival to the factory and placed into fermentation tanks for 12-24 hours before being washed and transferred to a secondary fermentation tank for an additional 10-12 hours.  This amplifies cleanliness of the coffee and provides a second opportunity to sort for defect.  Finally, the coffee is moved to raised beds to dry until proper moisture level is achieved.
