Antigua is is surrounded by three volcanos, the closest being Vulcan de Agua. At the foot of that volcano lies the Bella Vista mill, run by Luis Pedro Zalaya. Bella Vista has been in the family for generations and is now owned by Luis Pedro’s father. Together they have grown the company by taking over the management of neighboring farms. Through their expertise and focus on quality, this has given neighboring farms the ability to improve quality of their cherries and has allowed them to receive higher prices for their coffees.
The farm of La Folie is owned by Mari-Ann Urruela, but managed by the Zelayas. For us, this farm has represented a constant. Since 2015, we’ve been working with coffee from La Folie and have been able to see this rise in quality year after year. Always structured but soft and sweet, this year’s harvest has also brought forth the highest quality we’ve tasted yet, and a heightened malic acidity reminiscent of stone fruit, and baked pear.
