Mario Jesús’ farm is situated at a staggering 2050 meters above sea level. Elevations previously too high in Peru to be sustainable for coffee production, yet climate change has pushed all coffee production to be higher up.  At these elevations, coffee cherry maturation slows, and more complex sugars are able to develop inside the cherries, as well as fermentation is prolonged, which allows the natural bacteria and yeasts to produce more complex aromas.
The way that this change in elevation effects the coffee is not always a definable expectation, yet we’ve come to find that oftentimes these coffees will yield tighter, more focused acidity and a clearer representation of fruited characters.
In a region that previously lacked the infrastructure to reliably yield high-scoring, delicious, fruit-forward coffees, we’re thrilled to be able to work with Mario Jesús and offer this incredibly enjoyable coffee.
