This coffee from Santiago Caro represents a unique variation of the Chiroso mutation, first planted by his father, José Arcadio, over 10 years ago. Originally chosen for its productivity, they discovered in 2012 that these trees produced exceptional quality. This coffee undergoes a five day fermentation in stainless steel tanks, followed by a washing and hand sorting. This controlled method ensures the consistency that has helped Santiago’s coffee achieve high scores across competitions. Santiago is representative of a newer, younger generation of producers dedicated to creating high quality coffees and sustainable futures.
This exceptional lot was sourced and donated to us by our friends and exporters in Colombia at UNBLENDED, in efforts to support the coffee community impacted by Hurricane Helene. All the proceeds of this coffee will go towards these efforts.
