Context
Doña Carmen has been a coffee farmer for over 23 years. Her parents instilled in her a love for coffee and a passion for being a coffee farmer. She started with a small plot of an unknown variety in the region. Her dedication was recognized when she won the Cup of Excellence in 2014 with the coffee she affectionately named "chiroso," a term adopted by her and fellow coffee farmers. Carmen was one of the pioneers in cultivating this unique variety in her region.
She’s since become a leader within her community, assisting other coffee farmers in improving processes on their farms. Carmen strives to make Urrao's chiroso coffee recognized worldwide for its quality and the human talent behind it.
Ripe cherries are hand harvested, then float sorted to remove under and overripe cherries. Cherries are then fermented for 12 hours in open containers in their own pulp before depulping and then fermented in stainless steel for 72 hours.
