Danche // Gedeb, Ethiopia
Danche is a highly renowned coffee-producing community within the Gedeb district of Ethiopia’s Gedeo Zone, celebrated for its exceptionally produced washed coffees. The highly fertile soil, and staggering elevation of this area provides ideal conditions for highly vibrant and clean coffees. Established in 2019 by Negusse Debela under his company, SNAP — who specializes in cooperative management and processing, Danche collaborates with around 800 local smallholder farmers to process coffee cherries delivered to their station.
At Danche cherries are delivered and then submerged in water to float separate the ripe from the unripe cherries, immediately followed by de-pulping to remove the outer skin and mucilage. The beans then undergo fermentation in water for 36 to 72 hours to break down any remaining mucilage. They’re then moved to raised beds to dry for 10 to 14 days.
