Context
José Joaquin Bolaños is a second-generation coffee producer from the municipality of San Agustín, located in southern Huila, Colombia. At his three-hectare farm, Finca Villa Sofia, José grows mainly Gesha, Pink Bourbon, and Sidra. We sourced this lot from the Copa de Oro competition, held annually by our importing partners in Southern Huila, of which this is our third year helping to judge. This lot took top prize of the Southern Division of the competition.
This lot underwent a double fermentation post-collection. After the coffee was hand-selected for peak ripeness, the cherries were fermented intact in a hopper for 60 hours, de-pulped, and further dry-fermented for another 40 hours, rinsed, and put out to dry in a parabolic greenhouse-style solar dryer with raised beds inside for 15 to 20 days.
