Context
Acacia Hills sits on Mount Oldeani’s volcanic slopes, nearby the Ngorongoro Conservation Area. Leon, a third-generation Tanzanian coffee producer, returned from a career in pharmacy to pivot the family business from commodity to specialty in the 2000s. Leon and his wife, Aideen, acquired and rehabilitated Oldeani land in 2007, replanting with quality-forward cultivars. Through this work Leon hopes to bring global recognition for northern Tanzania’s specialty coffee community.
Fresh red ripe cherries are separated by density and pulped within 10 hours of harvesting using water from the mountain springs. The lot is then dry fermented in cement tanks under shade for 36-40hrs. The coffee is then washed in channels and then float sorted before being dried under shaded raised beds.
