Nayith Morales - Pink Bourbon // Huila, Colombia
Nayith Morales Fierro comes from a coffee-producing family from the municipality of San Agustín, Huila. Alongside her husband, this young producer cultivates the Pink Bourbon and Var. Colombia varieties on just approximately one single hectare. Her farm is around four years old and her plot of land is located separately from her home.
This washed Pink Bourbon lot was carefully processed utilizing a double fermentation process. After hand-selecting the ripe cherry, she floats the harvest, removing any debris and underripe fruit. She then puts the intact cherry in bags to ferment for 40 hours, after which the cherry is de-pulped and further fermented for an additional 40 hours in wet parchment form. After rinsing, the parchment is dried slowly on a cement patio for a period of 15 to 20 days.
