Nestor Lasso - Chiroso
Just outside Pitalito, brothers Nestor and Adrian Lasso run El Diviso. Nestor was working as veterinarian specializing in livestock farming when their father fell ill. Nestor and his brother, just 22 and 24 at the time, took over their father’s plot and began refining the soils on the farm. Rebalancing pH and nutrient profiles unlocked a new world for the potential of the farm while planting new varieties and focusing more intently on the fermentation dynamics allowed the coffees to retain deep sweetness and clarity.
This Chiroso lot is picked when fully ripe before undergoing an extended water-submerged fermentation of 40 hours. Chiroso itself is a newer variety that was originally thought to be a caturra or bourbon mutation, though it’s been recently recognized as an Ethiopian Landrace.
