This lot comes from Nestor Lasso's family-run farm, El Diviso, located in the highlands of Bruselas. Nestor and his brother Adrian took over the family farm five years ago with a goal to improve the soil biology, coffee quality, and transition the farm to produce high-quality specialty grade coffees. Since then El Diviso has become a center of innovation focused on precise processing and exploration of variety and fermentation.
This Field Blend is made up of Caturra and Castillo, two foundational cultivars in Colombian coffee production. The cherries are hand-picking at 13-16° Brix before float sorting and disinfecting via UV, followed by a 24-hour oxidation stage. After depulping, the parchment is held for another 20 hours in an open-air fermentation stage, then dried for 15 days under parabolic covers to ensure consistent drying and quality control.
