    Ninga Hill stands as a remote coffee-producing community, untouched by modern infrastructure, where coffee trees thrive alongside mud-brick homes and narrow dirt paths. Farmers in this region have endured cycles of displacement due to conflict, leaving their trees untended for years. Yet, upon the return of the community, cultivation continues forward, still yielding a coffee that remains strikingly elegant, refined, and complex.

    The Long Miles Coffee Project has strengthened its partnership with the Ninga community, establishing this washing station near the Nkokoma River. Built in 2019, this facility ensures access to meticulous and clean processing standards. The cherries are floated and hand-sorted for ripeness, before being pulped and fermented for about 12 hours.  The coffee is then rinsed with fresh water and left to soak for another 4-6 hours before being again hand-sorted and laid to dry on raised beds for 16-20 days.

    Sustainability efforts in Ninga are guided by dedicated coffee scouts like Sakubu, who train farmers in shade-growing techniques, soil health, and optimal cherry selection. This commitment ensures Ninga coffee continues to deliver vibrant, layered flavors each season.
