Context
As a young boy, Omar would come home from school and help out on his father’s small coffee farm de-pulping the coffee and helping out however he could during harvest. Now, more than twenty-five years later of inheriting that farm, Omar runs the farm with his wife and children, working together as a family. He’s gathered his experience in the coffee industry and has since purchased a larger farm, replacing the original varietals with more unique varieties, including this Chiroso lot. This is his first harvest of these coffees.
This lot is harvested and sorted, before pulping and spending 70hrs on the mucilage in sealed GrainPro bags. The coffee is then fully washed and laid to dry slowly on raised beds under parabolic shading.
