Ture Waji ‘Shoondhisa’ - Natural

This lot is named after the sub-kebele where the cherries are grown, sourced from roughly 35 smallholder farmers who cultivate coffee under semi-forested systems. Unlike high-density planting seen in Latin America, these gardens, which are often intercropped with subsistence crops, yield fewer cherries per tree, yet the natural growth and ideal soil capture the terroir exceptionally well.

Shoondhisa is processed at Suke, the original drying station of Sookoo Coffee, situated in the hills of Shakiso. Since 2017, Suke has been the pulse of Ture’s work, showcasing the potential of natural processing when matched with clean harvesting and careful drying.
