Founded by Ture Waji in 2018, Sookoo Coffee has quickly established itself as one of Guji’s most respected coffee producers. Based in Shakiso, the company works closely with surrounding farming communities, producing coffees that celebrate the diversity of Guji’s individual kebeles rather than blending the region into a single identity.

This coffee comes from the Shoondhisa Kebele, where approximately 35–100 smallholder farmers cultivate coffee on small garden farms integrated with food crops and native vegetation. Coffee trees here grow within semi-forested systems, benefiting from natural biodiversity and slower cherry maturation due to the higher elevations.

The lot is composed primarily of Gibirinna 74110 and Serto 74112, two selections developed by Ethiopia’s Jimma Agricultural Research Center (JARC) in 1974. Originally selected from the forests of Illubabor’s Metu Bishari region, these varieties were bred for resistance to Coffee Berry Disease.

The cherries are delivered to the Suke Drying Station — the first station established under Sookoo. Whole cherries are then dried intact on raised African beds for approximately 15–20 days. During drying the cherries are spread in thin layers and turned frequently throughout the day to encourage slow, even moisture loss while promoting clean, controlled and articulate fermentation.
